Street foods sustain livelihoods and preserve culinary traditions in Ethiopia. However, chemical food safety becomes a public health concern. Most relevant chemical hazards will be identified and health risk assessment will be conducted. Adulteration and quality of frying oil will also be determined. Multicriterion Decision Analysis (MCDA) approach will be used to select most appropriated mitigation methods.
